Last Friday, I went to see my granny, who lives up in a village about 150km away from St. Petersburg. Check out the size of that squash from her garden ...next morning got up around 5:30AM to go mushroom hunting (This year we had a ton of rain in the first week of Sept and the temp was staying in the mid 80s - perfect conditions for the mushrooms to grow) Here is my haul after 3 hours of hunting: Porcini ($60/lbs at Whole Foods) Chanterelles Orange-cap boletus (Same as Porcini, just has bright orange cap and a dark stem)

You got it Sinker - Sour cream and a fresh bread are the must haves with this soup. It is very time consuming though to cook this thing, if you're making it the right way...it took me over 3.5h from start to finish...I did prepare chicken separately in a slow cooker, while I was waiting for the beets to cook...so that also added a little extra time.
