I don’t think skirt steak is as good as people think it is, or as good as it’s made out to be I should say. It doesn’t stand alone as well as top sirloin does. Hell you need to cut it a certain way just not to have a horrible chew. At $6lb I’ll pick up 20lbs but no more. Half of that will be used at some point on an unceremonious cookout with guests who will think I spent decent money on a meal for them. Sous vide often. It’s actually a time saver for me. Throw pork/chiken/steak in during the afternoon and finish it on the grill in like 2 mins when ready to eat.
