Brown in batches and get a good crust. Onions, garlic, balsamic vinegar and loosen up the brown bits on the bottom Add back the meat, some tomato paste, flour Some red wine, beef broth, water, thyme, sugar Will braise in oven at 325 for 2 hours then will add some carrots and potatoes for an hour. A very very small amount of water will be in that glassware. With steaks there will be butter in there too. The water will relax the exterior of the meat. I like to butter my steaks on the flip as well.Depending on thickness I will butter them when they come off as well. Flip the steak after a few minutes to relax the other side as well. If I don’t have a bunch of juice on the plate to swirl each bite in, I’m not happy. Perhaps you like a well crusted steak. If that’s the case. Disregard. Also. Thank you for your contributions.
