housepicks Posted May 7, 2020 Report Share Posted May 7, 2020 Country ribs come from the sirloin end. It has some of that dark almost red colored meat and a lot of fat. Cooked slow it becomes very tasty. Butchers also sell the boneless sirloin pork roast or as my go to place calls it a “supreme roast. I will be that and slice 3/4 thru and call that boneless country ribs. A big boneless pork loin won’t ever fit anyone’s description of a country rib.
