Different places cut meat different ways. These were bone in. Joe saw them on the grill and immediately knew what they were.

"country style" is a fancy word for shrink .....suggest you pass next time, by a boneless loin & cut your own country style chops.  Ive seen your honing steel which usually means you are good with a knife.. just a tip for you HP

Country ribs come from the sirloin end. It has some of that dark almost red colored meat and a lot of fat. Cooked slow it becomes very tasty.

 

Butchers also sell the boneless sirloin pork roast or as my go to place calls it a “supreme roast. I will be that and slice 3/4 thru and call that boneless country ribs.

 

 

A big boneless pork loin won’t ever fit anyone’s description of a country rib.
